THE GRAPE VARIETY: Verdeca is a native variety of white grape originating from Puglia, it is an ancient vine, whose cultivation dates back to at least the 18th century. The name Verdeca probably derives from the green color of its berries, which tend to maintain this shade even when they are fully ripe. The grape is medium-small in size, compact and rounded, with a thin skin, relatively resistant but also quite delicate. The pulp is juicy and has a good acid content, with a delicate and fresh flavor, with notes of white fruit and citrus.
VINIFICATION: After a careful selection of the grapes from old Verdeca plants, a soft pressing takes place and the wine is then left to rest for a short period.
WINE REFINING: Once fermentation is complete at a controlled temperature, it is left to rest on the yeasts.
ORGANOLEPTIC EXAMINATION: Straw yellow color tending towards greenish. On the nose it is delicate and pleasant, fruity, with notes of pineapple and a pleasant citrus nuance with hints of bergamot. In the mouth it is dry, fresh, savoury and with good persistence.
FOOD PAIRING: Excellent as an aperitif, with green and seafood salads, seafood and fish. Pasta dishes with light sauces, Mediterranean cuisine, light and vegetarian dishes.
