THE GRAPE VARIETY: Susumaniello, likely of Dalmatian origin, owes its name to the fact that, being highly productive, especially in the first ten years of its life, it tends to laden itself with clusters of grapes, resembling a laden donkey. It is a native grape variety of Puglia, primarily from the Brindisi area, characterized by small, black grapes that ripen relatively late in the season, allowing for a good balance of sugars, acidity, and aromas in the fruit.
VINIFICATION: The grapes are destemmed and gently pressed to avoid excessive extraction of tannins and phenolic compounds from the skins. The resulting must has very brief contact with the skins (usually a few hours to a maximum of 24 hours), resulting in the characteristic pale pink color. It is then left to rest at a low temperature to separate solid impurities, resulting in a clean liquid ready for fermentation. The clear must is fermented at controlled temperatures (around 14-16°C) to preserve the delicate fruity and floral aromas. Fermentation lasts approximately 10-15 days.
WINE AGEING: Once fermentation is complete, the wine is aged in stainless steel to maintain its freshness and vivacity. During this phase, light bâtonnage may be performed to enhance aromatic complexity, periodically stirring the fine yeasts.
TASTING NOTES: Intense pink color, fresh and fruity flavor, with notes of strawberry, cherry, and berries. Strong character and personality, balanced acidity.
FOOD PAIRING: Excellent as an aperitif, with appetizers, light cured meats, and fresh cheeses. It pairs well with vegetable-based first courses, white meats, fish, and soups.
