THE GRAPE VARIETY: Susumaniello, probably of Dalmatian origins, owes its name to the fact that being very productive, especially in the first ten years of life, it tends to load itself disproportionately with bunches of grapes so much so that it resembles a loaded donkey. It is a native vine of Puglia, mainly from the Brindisi area, characterized by a small, black grape that ripens relatively late in the season, allowing for a good balance of sugars, acidity and aromas in the fruit. The wines produced from this vine tend to have an intense, almost purple color when young.

VINIFICATION: After a careful selection of the grapes from old Susumaniello plants, the pressing and destemming are followed by fermentation for 15/20 days at a controlled temperature in truncated-conical steel tanks.

WINE REFINEMENT: Once fermentation is complete, after resting, it is refined for 4 months in 50 Hl conical French oak (Allier) vats.

ORGANOLEPTIC EXAMINATION: Ruby red color with purple reflections, intense, complex and fine on the nose with strong hints of red berry fruit. Spicy and frank, warm and soft on the palate. It expresses a good freshness and a typical tannicity of susumaniello that is completed with a light flavor. Balanced and quite intense, persistent and fine, full-bodied and quite harmonious.

FOOD PAIRING: Roast meat, game, medium and long-aged cheeses.
