THE GRAPE VARIETY: The DOC Salice Salentino was established in 1976, taking its name from the town of the same name where it was grown. Production is permitted in the provinces of Brindisi and Lecce, and in our case it is vinified with 100% Negroamaro grapes, the most representative grape variety of Puglia. There are two hypotheses as to the origin of the name of this grape variety; according to some, it comes from the repetition in two languages of the word black that distinguishes the color of the berry, in Latin niger and in Greek màru; according to others, it comes from the characteristics of the grape with thick, dark skin and a bitter flavor of the first wines that were produced.
VINIFICATION: Classic red vinification, extending the contact time between the grape marc and the must to allow greater extraction of colouring, aromatic and tannic substances, to ensure that the wine is well structured for ageing.
WINE REFINING: Once fermentation is complete, the wine is stored in steel tanks for the first year. It completes its aging cycle first in barriques, then in large barrels and finally in the bottle.
ORGANOLEPTIC EXAMINATION: An intense red color with fleeting purple colors. Balanced tannicity with spicy hints, notes of coffee and cocoa, fruity (notes of black cherry in alcohol), rich and harmonious in the mouth.
FOOD PAIRING: Roast meat, game, spicy dishes, mature cheeses and cured meats.
