THE GRAPE VARIETY: The name Primitivo derives from the Latin "Primativus." The first documents date back to the early 1700s, when a priest from Gioia del Colle named Don Francesco Filippo Indelicati noticed that among all the grape varieties grown in his vineyards, there was one whose grapes ripened earlier than the others, so much so that they were harvested as early as August. The grape is characteristically spherical, medium-sized, bluish in color, rich in bloom, and contains a large amount of sugar, giving the wine a high alcohol content and a very intense color.
VINIFICATION: After pressing and destemming, the must macerates with the skins for 6-7 days. The fermentation temperature is maintained between 25-26°C.
WINE REFINEMENT: Once fermentation is complete, the wine rests in barriques for approximately 4 months.
TASTING NOTES: Ruby red in color with a delicate garnet hue, an intense and complex aroma. Fine in quality, mineral notes blend with delicate notes of morello cherry, black cherry, and plum, while spicy notes conclude with a persistent finish. On the palate, the presence of gentle tannins, good acidity, and minerality are in perfect harmony with an overall smoothness that enhances its characteristics. Balanced and intense, persistent and refined, with a full body.
FOOD PAIRING: Pasta with flavorful meat sauces, excellent with red meats, especially lamb. An ideal partner for medium- and mature cheeses.
