THE GRAPE VARIETY: The name Primitivo derives from the Latin “Primativus”. The first documents date back to the early 1700s when a clergyman from Gioia del Colle named Don Francesco Filippo Indelicati noticed that among all the vines grown in his vineyards there was one whose grapes ripened before the others so much so that they were harvested as early as August. The grape is characterized by a spherical shape of medium size with a bluish color rich in bloom and containing a large quantity of sugar that gives the wine a high alcohol content and a very intense color.

VINIFICATION: This ancient vine requires special attention during the vinification phase to ensure that it expresses all the varietal characteristics, it needs periodic ventilation and a particular temperature control. Once the maceration is completed, the must is separated from the marc and the fermentation ends in stainless steel tanks.

WINE REFINEMENT: Once fermentation is complete, the wine is refined in barriques for 3-4 months. Once the refinement cycle is complete, it is filtered and bottled.

ORGANOLEPTIC EXAMINATION: Intense red colour with violet reflections, sweet spicy hints and ripe fruity hints of jam, soft, persistent taste with expertly balanced tannicity.

FOOD PAIRING: Roast meat, game, mature cheeses and cured meats.
