THE GRAPE VARIETY: Also known as Uva di Troia or Troiano, it is believed to have historical roots linked to the city of Troy in Asia Minor and then imported to Puglia by the ancient Greeks. Another hypothesis is also told linked to Diomedes, a friend of Ulysses, who, returning and victorious from the Trojan War, sailed along the Adriatic Sea landing on the banks of the Ofanto river and bringing with him vine shoots that gave life to this ancient vine variety. Native to Puglia, it is characterized by a large and squat bunch, with a black berry with a skin rich in polyphenols and moderately sugary. It differs from other Apulian black berry varieties for its late ripening.

VINIFICATION: Wine obtained from old Nero di Troia plants. After a careful selection of the grapes and a late harvest, a meticulous and punctual vinification follows in its various phases. Fermentation takes place in steel at a controlled temperature.

WINE REFINEMENT: Once fermentation is complete, the wine is refined for 6 months in French oak barrels.

ORGANOLEPTIC EXAMINATION: Intense red color with purple reflections, consistent, intense, persistent and fine to the nose, with strong hints of spices, cocoa, coffee and licorice. Pleasantly fruity and balanced to the taste, with a significant toasted note.

FOOD PAIRING: Red meat, cheeses and soups.
